I love the way this cake looks , with the icing dripping down the sides. It also tastes delicious, perfect for a winters day.
Orange cake
3 cups plain flour
half teaspoon salt
half teaspoon bicarb soda
3 eggs
250g butter at room temperature
1 cup buttermilk
grated zest of 3 oranges
2 tablespoons concentrated orange juice
Orange glaze
1 cup icing sugar mixture
quarter cup concentrated orange juice
30g melted butter
Preheat oven to 150C and grease a large bundt tin. The method for this cake is pretty simple,
mix flour salt and bicarb in one bowl and in a separate bowl mix together the eggs and sugar with a handheld mixer, then add butter and mix till creamy. Add the buttermilk orange zest and juice and then mix in the flour mixture. Bake for around an hour. Once the cake is warm but not hot start to make the glaze, put ingredients for the glaze in a bowl and whisk together. Using a pastry brush brush the glaze all over the warm cake, it will seem like a lot of glaze but keep going as the cake will absorb it and when the cake cools it will form a crackly coating which is sweet and yummy! x
